It's been a while since I read any regularly. Apart from CoaEG above, I'd recommend pretty much anything by Rod Malapitan (a co-author of the above). His fics are at

Whilst the page itself hasn't been renovated since '98 (and many of the fics haven't been touched since '99) what's there is good.
Another good place to look is Spoof Chase Productions, located at
http://spoof.maison-otaku.net/ Led by Stefan "Twoflower" Gagne, the group hasn't done anything new since '99, but much of what they've done is also good. You may wish to avoid the link to Improfanfic - it became kind of elitist a couple of years back, and since then it's gone downhill, IMHO. Still, some of the older stuff is pretty good.
In particular, check out Twoflower's Slayers Trilogy, a post-Try work. You might not agree with all the stuff in it, but it is rather good. See

If you can find any of Zen's Ranma 1/2 stuff, it's very good (though often dark), but his page died last year, and I'm not sure where you'd look. Try the RAAC archive, I guess. Nightelf's stuff (also mostly Ranma) can be found at
http://www.thekeep.org/~nightelf/fanfic/index.html and is generally worth a look.
One of Mark's recommendation's references something called "The Bet", which was a big Ranma fic challenge a while back. Now, the winner and several contenders were really quite cool, but I've lost the ruddy homepage. Searching for it on google doesn't help (you try feeding "bet" in to google and see what you get), but I'll post the URL if I find it again.
Yet more Ranma fanfic - Scott Jamieson's work is at

http://www.thekeep.org/~willmore/2096a.htm is the home of Chris Wilmore's Ranma: 2096 fanfic. It's huge, odd, and interesting.
I'd finally like to recommend Lara Bartram's stuff - but most of it ain't for polite company, so I won't - and Andrew Huang's hilarious Neon Genesis Evanjellydoughnut. It's at

Oh, while I remember: Fanfic authors are notorious for retiring without notice or simply failing to update their sites for
years. Many of the above are perfect examples of that. You can usually mail 'em about it from their sites, but don't hold your breath.
