Cake recipe

i've been given the task of baking a cake for a friend birthday. I want to do something exceptionally good/unusual and have no problem spending aa tenner on ingredients as this is her present. Any ideas? Not run of the mill spong. I want this to be super.

www.about.com send me a few emails everyday - most get deleted without even being looked at, but they do have nice sounding things.

Last time I made it, though, I forgot to put in enough baking soda and baking powder. Made it sort of brownie like. ah well.

I've tried that recipe 3 times! I still can't get it right [img]littleicons/yellowsadface.gif[/img]. It seems to be burnt on the outside and still liquid on the inside. Possibly just me though.

225g Flour
225g Butter
225g Sugar
2-3 eggs
1 tsp Vanilla essence
Pinch 'o baking powder.
Pint o' milk

Sieve all the dry ingredients, then bung 'em in a food processor. Add the eggs and some partially melty butter, then blitz it to buggery. Add the vanilla, then add milk gradually while pulsing until it reach a good dropping consistancy. Don't let it get runny, and add flour if you do.

Stick 'em in some nice greasy cake tins (it's a good idea to line the bottom with baking paper too), then pop 'em in a good hot oven (190 degreees or so, gas mark 6-7) and leave them for 20-25 minutes. You'll know it's done when it looks golden brown and the peaks are stiff.

Take 'em out, cool 'em off, then whack whatever goop you like over the top.

And there you have it.

Well, how big of a pan are you using? What kind of oven do you have? At what temperature were you cooking it?


I've never had any problems with it (Except for above mentioned mis-measuring), but then again, it is my recipe.

And lastly, did you use the american measurements or the metric ones ? (which i can't entirely vouch for)

Rufus! Thank you for the Red Velvet Cake recipe, my housemate made one for our Christmas dinner this evening and it was superb :)
