Hey everyone!

Post your favourite veggie/vegan recipe, making it clear whether it's veggie or vegan!

Carrot and Lentil Soup

Postby LizBot on Fri Apr 01, 2005 5:51 pm

Cheap, easy, healthy and delicious. This soup got me through the winter!

Carrot and Lentil Soup

2 onions
3 carrots
3 cloves garlic
1 tbsp. Oil
1.5 L water
2 or 3 vegetable stock cubes
250g red lentils (about 1 cup)
Salt and pepper

Chop all the veggies. In a large pot, sauté the onions and garlic with the oil for a minute or so, then add the carrots. Place the water and stock cubes in the pot and stir until dissolved, then add the lentils. Boil gently for 30-40 minutes, then remove from heat. Blend it all together with a blender or hand mixer, season with S&P, and add a splash of soymilk if you like.

Serves 4

How do you make the vegan cheese sauce? Which is your favourite vegan bacon?
