If you're talking about sediment, then yes, drink it. Beers such as dubbels / tripels / quadrupels / belgian strongs age well, of course their constituent parts determine just how well.
There's no hard and fast way of taking the sediment. My prefered method for a bottle conditioned beer at a tasting is to let the sediment settle out and very carefully pour off the beer. However I have many friends that pour the whole thing in one go, or pour the sediment separately and drink it in some sort of shot glass arrangement. Either way, the worst the yeast can do is increase how 'regular' you are.
Which Leffe is it, out of interest? I liked the Brune over the Blonde, but stuff like the Vieille Cuvée was superb.
