Depends what sort of single men you're after - ones who haven't spend all their student loan and aren't bogged up to their eyeballs in work (i.e. 1st/2nd years - if you are a 1st/2nd year and are one of the above, get worried!).
Nice guys who don't drink a lot may be found in more sedate places. Certain species of nice guys can frequently be found in "Old Mens" pubs, supping a quiet pint. For a more rounded character, I'd suggest the Cellar, Golf Place (though maybe not any more now it's changed... *sigh*), Drouthys or the Whey Pat. These also tend to be more herbivorous and less likely to attack on sight, so provocation may be necessary. They are also more likely to be pack animals.
Alternatively, try looking in not-so-obvious places like halls or in classes. Work your charms (subtly, and prepare for a long-term investment in this), and it may pay off.
As for single guys over 6', I can think of a couple... don't give up!
...then again, that is only my opinion.
